What are the best places to go to in Tennessee?

We are going on vacation in the Gatlinburg/ Pigeonforge area in Tennessee. We have never been there before. I would like to know the best activities to do there and were. We are planning on whitewater rafting, hoarse back riding and we'd like to go either on the tram or ski lift that takes you over the mountains. So what is the best place to do these things? Any other suggestions on what to do? I'd also like to know restaurants to go to. I am a vegetarian so don't suggest alot of barbeque restaurants. Also is there a good shopping (clothes) place in Gatlinburg. I'm sure there's like a mall so is it nice? Thank you! :)
